Crusty Whole Wheat Baguettes: #27 of 1000 Sustainable Food Experiments

There’s nothing like a freshly baked crusty baguette straight out of the oven, maybe with a little butter and honey melted on top of it. This one got half of it eaten before I even had a chance to take a picture! I’ve added some whole wheat flour to the dough to give it an earthy, healthier kick.

This is part of our 1,000 Food Experiments to create sustainable meals for our family and hopefully yours.

Ingredients ($1.50 total)

1½ cups hottest tap water – free
1 tbsp active dry yeast – $0.50
1 tsp sugar – $0.02
1 tsp salt – $0.05
1½  cups white flour – $0.24
1½ to 2 cups white whole wheat flour – $0.36
1 egg – $0.29

Directions

1. In a small bowl, mix the yeast, sugar, and hot water, and let it sit to bloom for 5 minutes, forming a foam on top of the mixture.

In a large bowl, mix the salt and flours, then stir in the bloomed yeast mixture. Mix it with a wooden spoon until you need to get in there with your hands, then knead it for 5-8 minutes to work out the gluten and form it into a smooth, elastic ball of dough (not sticky). Cover with a tea towel and let it rise in a warm place for 1 hour.

2. Cut the dough into two halves, and roll out each half to about 8×10 inches. Fold it in half lengthwise and pinch the ends to seal, then fold it in half again and pinch the ends to seal again, forming it into a long roll that looks somewhat baguette-like. Preheat oven to 450F and put a pan of water on the bottom shelf underneath where the baguettes will bake.

3. Transfer the loaves to a parchment-lined baking sheet (feel free to reuse the parchment paper for multiple bakes if it hasn’t gotten sticky spills on it), and slash the dough several times with a knife to make lovely cut marks. Cover and let it rise in a warm place for 15 minutes, then brush the beaten egg over the top. Bake for 15 minutes until golden brown, being careful to not let too much steam out of the oven (this gives it the crunchy crust). Cool if you can wait for it, otherwise slice and enjoy!
