Crispy chicken is classically American – think chicken sandwiches or Southern fried chicken. This is a healthier version, baked in the oven but still mouth-wateringly juicy and crunchy.

Ingredients ($8 total)
2 lb chicken breast – $6.54
1 egg, beaten – $0.31
1 cup breadcrumbs – $0.25 (I took leftover bread from the freezer and ground it up in the blender)
3/4 cup flour – $0.12
1 tsp oregano – $0.28
1 tsp paprika – $0.28
1 tsp sage – $0.28
Salt and pepper to taste
1. Preheat oven to 425F. Tenderize the chicken breasts by putting them between cling wrap and hitting them with a rolling pin.
Put the beaten egg in one bowl, mix the flour and spices in another bowl, and put the breadcrumbs in a third bowl.
2. Dip each piece of chicken first in flour, then in egg, then in breadcrumbs, making sure to thoroughly coat and press the breading into all sides.
3. Put the chicken on a baking tray lined with parchment paper and greased with olive oil. Bake for 10 minutes, then flip over and bake for another 12 minutes. Cut into one piece to see if it is cooked through and not raw pink inside. Serve with noodles and veggies, or make your own crispy chicken sandwich!
